Healthy Plant-Based Recipes & All The Inspiration You Need to Thrive
Vegan Pancakes with a Berry Sauce (ve, gf, refined-sugar free)
Is there anything better than a big stack of [vegan, wheat and refined sugar-free] pancakes on a Saturday morning? I don’t think so. These pancakes are light and full of goodness whilst still delicious and easy to make.
Winter Squash, Carrot & Ginger Soup (ve, gf)
Add more orange to your diet with this deliciously creamy soup and boost your beta carotene, an antioxidant linked to lung health – something we’re always looking out for during winter. The vitamins C and A will also contribute to your eye and skin health as well as your overall immunity.
Tofu & Broccoli Scramble (ve, gf)
This is one of those recipes that make the perfect breakfast, lunch or dinner. It’s beautiful on its own, served with some rye sourdough or alongside roasted sweet potatoes. Top it with avocado slices or kimchi, you get the gist, it’ll be delicious whichever way you want to eat it! It also makes a super nutritionally balanced base for your meals.
Comforting Miso Broth (ve, gf)
This miso broth is one of my favourite things to eat during wintertime. It’s light and satisfying and packed with veggies and probiotics. The perfect meal when you need a little reset or are short on time and need a quick nourishing meal (I promise you, it’s quicker than ordering your favourite take-away).
Creamy & Nutritious Mac-No-Cheese (ve)
When transitioning to a plant-based diet, cheese is the thing people seem to miss the most. However, with mounting evidence linking saturated fats (present in dairy products) and increased inflammation in the body, a traditional mac & cheese is far from being considered a healthy meal – at least in my books. Instead of feeling bloated, heavy and nauseated after your mac & cheese, this version is way more nourishing, healthy and light whilst still as (if not more) delicious.
Rudolph the Red Nose Reindeer Chai Biscuits (ve, gf)
Every year on 1st December, I always look back in amazement at how quickly the year went by. It feels like summer just ended and here we are decking the halls. And even though I prefer those warmer days, Christmas is, by far, my favourite time of the year: Christmas trees, the festive markets in every street corner, the lights and decorations and the gatherings with family and friends. In an attempt to soak up every single second of this holiday spirit I want to invite you to try these chai biscuits – perfect to leave for Santa on Christmas Eve🎄
Mince Pies (ve, gf, refined-sugar free)
Deliciously festive mince pies, with the Mana Living twist. These wheat and gluten-free, refined sugar-free, vegan mince pies are the perfect addition to any Christmas table, whether you’re a health-conscious vegan or not. They also make great edible gifts. I wholeheartedly believe that, if we care for our loved ones, we should give them the gift of wellness (in the form of healthy food, activities etc.) instead of more traditional gifts such as alcohol and processed treats.
Super Greens Pasta
This is one of my favourite pasta dishes right now. It’s creamy, comforting and packed with nutritious ingredients such as cruciferous, leafy greens, legumes and nuts.
Low-Fat Pumpkin Pies (ve, gf, refined-sugar free)
Autumn and winter are usually the seasons I crave more sweet, comforting foods. There is something about the cold, wet weather that makes me want to stay at home with a piece of pie or cake and a herbal infusion.
Vegan Roasted Tomato & Watercress Frittata (ve, gf)
A weekend brunch favourite – this vegan frittata is packed with protein and flavour. I love the roasted cherry tomatoes and watercress combination but, just like a regular frittata, you can use any veg you have on hand.
Green Goodness Soup (ve, gf)
A deep and sweet soup with nourishing greens – just pure comfort and simplicity! It all comes together in 30 minutes and makes for a perfect lunchbox soup too. I love it topped with spicy roasted chickpeas and basil for a fresh taste.
