Comforting Miso Broth (ve, gf)
This miso broth is one of my favourite things to eat during wintertime. It’s light and satisfying and packed with veggies and probiotics. The perfect meal when you need a little reset or are short on time and need a quick nourishing meal (I promise you, it’s quicker than ordering your favourite take-away).

1 onion
1tbsp olive oil
2 garlic cloves
1 celery stick
1 carrot
150g shiitake mushrooms
150g tenderstem broccoli
2tbsp miso paste
10g coriander
1tbsp sesame seeds

Peel and finely chop the onion. Heat the olive oil in a large pan and sautee the onion on medium heat, until translucent but not coloured.
Peel and mince the garlic. Trim and finely slice the celery stick. Trim, peel and dice the carrot into quarters. Clean and roughly chop the bigger mushrooms, small ones can be left whole. Trim the broccoli and slice any longer spears.
Add the veg to the onion and sautée for 5 minutes.
Add 1.5 litres of water and bring to a boil. Once the veg are tender, remove the pan from the heat and after 5 minutes add the miso paste. Stir until fully dissolved.
Taste and check if needs more miso (the more you add the saltier it will be so add a little bit at a time).
Garnish with chopped coriander and sesame seeds.
