Green Goodness Soup (ve, gf)

A deep and sweet soup with nourishing greens – just pure comfort and simplicity! It all comes together in 30 minutes and makes for a perfect lunchbox soup too. I love it topped with spicy roasted chickpeas and basil for a fresh taste.

    • 2 yellow onions

    • 2tbsp olive oil

    • 2 medium courgettes

    • 1 head of broccoli

    • 1.5L water of good quality vegetable stock

    • 1 cup frozen peas

    • 100g kale

    • 100g spinach

    • salt & pepper, to taste

    1. Peel and dice the onions. In a tall pan, heat the olive oil and sauteé the onions for 5 minutes on low heat. Season with salt and pepper.

    2. Trim and slice the courgettes and break the broccoli head into florets. Try and keep everything to a similar size so it cooks evenly.

    3. When the onions are soft, add in the courgette and broccoli and stir. Add the vegetable stock and peas and bring to boil. Reduce to medium heat and cook until the vegetables are soft.

    4. Add the kale and spinach and cook for 2 minutes.

    5. Blend the cooked vegetables into a soup and season to taste.
